Gift Baskets

In addition to our standard product offerings, we are excited to announce new
pre-made baskets

Over the next few weeks we will be expanding the Gift Basket product line to include all natural lip balm products and handmade soaps.  Also, we will be adding some gift baskets specifically for Father's Day.  All of our gift basket prices already include Fed Ex four day shipping (no additional shipping charges are added during check-out for these items).

Recipes of the Month

Submit your recipes for inclusion on the ArmadilloPepper.com website and for consideration in our monthly newsletter.  Your recipe will include a credit with your name along with your city and state.

Each month we select 2 to 3 recipes and include in our Newsletter.  If your recipe is selected for the Newsletter, you will receive $5 Armadillo bucks to spend in our store!  So, submit your recipes and save yourself some money.

Fresh Apple Cake (from Tenia B)
Ingredients
  • 2 cups sugar
  • 3 eggs
  • 1 1/4 cup oil
  • 2 1/2 cups self-rising flour
  • 2 medium apples, cored, and chopped, but not peeled
  • 1 cup coconut
  • 1 cup chopped nuts
Instructions
  1. Beat sugar, eggs and oil until creamy.
  2. Gradually add flour, blending well (batter will be stiff). Fold apples, coconut and nuts.
  3. Spool into greased and floured tube or bundt pan.
  4. Bake at 350 degrees for one (1) hour.  Let cool 30 minutes in pan, remove.

This cake requires no icing, so I sprinkle powdered sugar on top and it makes it sweet enough.

Ann's Veggie Casserole (from Tami D)
Ingredients
  • 1 1/3 cup Minute Rice
  • 1/4 cup chopped onions
  • 1/4 cup chopped celery
  • 1 small jar Cheeze Whiz
  • 2 cans mushroom soup
  • 1 - 14 oz can of mushrooms (or fresh)
  • 20 oz California Mix (thawed)
  • 1/4 cup butter
  • French fried onion rings
Instructions
  1. Combine all ingredients except butter.
  2. Put butter pats over. Cover casserole and bake 35-40 minutes at 350 degrees. Uncover and sprinkle onion rings over. Bake another 30 minutes.

CrackerHouse Sauces
makes Fire and Medium Hot Sauces, Hot and Medium Wing Sauces and Honey Mustard.  Their products use the Datil Pepper that is famous in the St. Augustine, Florida area.

Datil Peppers are a bit sweeter and fruitier than Habaneros and have a spiciness ranging from 100,000 to 300,000
Scoville Units.  Mature fruit are 1” to 3” in length and are yellow/orange.

St. Augustine, Florida is known for its Datil Peppers and Datil Pepper Hot Sauces.
The majority of Datils are produced in St. Augustine, FL where they have been grown for over 250 years.

In addition to their heat, Hot Peppers offer several health benefits. They are a good source o
f potassium, iron, vitamins A, B, C and E, low in sodium and calories, and have no carbohydrates. Peppers improve digestion and can increase your metabolic rate by up to 25%, which is beneficial to the dieter.

One study by Cedars-Sinai Medical Center indicates that
capsaicin (the stuff that makes makes peppers hot) in high dosage is effective in killing prostate cancer cells.  Another study published by the BBC News states that Chili peppers could help scientists to develop an effective treatment for patients with arthritis.

About 20 years ago CrackerHouse Sauces received a Datil Pepper plant as a gift and the original "Sweet and Sassy sauce of the South" was born.  The family still grows their own Datil peppers.

The Honey Company -
Betty and Jim have been making their Tupelo, Orange Blossom, Gallberry and Comb honeys
in North Central Florida for a long time.   

Honey does not spoil as other foods and remains viable for years. Honey includes several small amounts of essential vitamins and minerals including niacin, riboflavin, calcium, copper, iron, magnesium, manganese, phosphorous, potassium and zinc.

Additionally, honey contains antioxidants that may help delay the damage to cells or tissues in the body. One tablespoon of honey contains:
  • Calories: 60
  • Total Fat: 0 g
  • Total Carbohydrates: 17 g
  • Protein: 0 g

A recent study by Penn State University nighttime cough symptoms (related to a cold) for children better than over-the-counter cough medicines (you should first consult your Doctor as some recommendations indicate honey should not be provided to children under 24 months old).

The National Honey Board indicates that research has shown honey to be a good pre-workout energy source, aids an athlete’s endurance and helps the athlete’s muscles recuperate following a race or workout.

Honey is also known to help prevent scarring.

It takes a lot of work to bring you honey.  About 2,000,000 flowers are visited to make one pound of honey.  A honeybee will visit between 50 and 100 flowers on each trip.  It's estimated that a single bee hive can product between 60 and 100 pounds of honey per year (so, there are a lot of bees out there working).

Which honey is right for you? As a rule-of-thumb, lighter-colored honeys tend to be milder in flavor and darker-colored honeys have a bolder taste.

 Betty also makes some terrific pepper jellies: Habanero Gold, Datil Pepper and Habanero Garlic.  PHabanero Jelly, Datil jelly, Habanero Garlic Jellyepper Jelly is used as a glaze on meats such as ham and it is used as a condiment for other meats and fish. Some prefer to spread it on crackers with cream cheese as an appetizer.  Other Pepper Jelly uses include: on a cracker with goat cheese, on a fried oyster, with Brie, on coconut crusted shrimp, on egg bagels with cream cheese, on corn bread and more…....We have even heard of it being used on popsicles, ice cream and in margaritas.


I don't know if you have ever tasted any of the Pepper jellies, but you have to try Habanero Gold (one of my personal favorites)!
